Objective: The project aimed at optimizing and enhancing the organoleptic characteristics of Greek stevia. This goal was achieved by intervening throughout the entire cultivation cycle, post-harvest treatment, and processing of stevia to produce raw materials (sweeteners) with outstanding flavor, up to the development of new or improved food products using innovative methods
