Objective: The project was organized into 4 work packages (WPs). The project focuses on the development of high-value-added yogurt enriched with probiotics with potential health benefits. Specifically:

1. "Selection and isolation of probiotic strains.
2. Encapsulation of probiotics in matrices based on prebiotics.
3. Investigation of the biological activities of selected probiotics and prebiotics.
4. Production of Greek strained yogurt enriched with probiotics.
