Sustainable preservation of marine biomasses for an enhanced food value chain (ERANETs 2021Α - E.U.)
Objective: The objectives of the program were to reduce food waste and increase the productive use of marine biomass by inventing innovative processing methods and developing ingredients that could serve as a basis for new food products.
Contribution of LPAD
- The application of conventional spray drying and hot air drying for a comparative evaluation and analysis of the technologies used in the development of high-quality powders from fish protein hydrolysates (FPHs) and fractionated products.
- Development of gluten and gluten-free bakery products (e.g., snacks, brioche) and evaluation of their shelf life.
- Micro-encapsulation of natural antioxidants in packaging material using the technology of electrospinning and/or extrusion.
